Harvey builds each and every smoker according to how you want it to be. There's no one 'type' of smoker you can have - so you get to bring your ideas about size, styles, features, whether you want offset or reverse offset and even the decorative touches (we've had one request for a 'Star Wars' theme smoker). Harvey will apply the necessary principles of smoker building, including fire to barrel ratios making sure the smoker you design will work the way you need it to.
Harvey started building BBQ Smokers because he is passionate about BBQ - smoked meat is his thing.
Not everyone wants a BBQ Smoker to compete with though. The 'Ute Smoker' - so named because you can load it up on the back of a ute and take it just about anywhere - was created for those people who want 'one to go, thanks' or don't cook for large crowds.

All of these parts (except the Fire Box) fit inside the barrel of the smoker for easy transportation.

So, what's so "CUSTOM" about that?
Although these models come as a kit, all with the same basic components, each Ute Smoker can be customised to suit with regard to styling. The one in these images uses an old conrod from a Briggs and Stratton engine as the handle. Other models we've made have had mechanics tools and gun parts as handles and hinges. Let us know your ideas about the styling, and Harvey will work his wonders of creativity to help your ideas turn into reality.

That's why these are true CUSTOM BBQ Smokers - because Harvey will build whatever size you want!
The custom build shown on the left WAS our "mother of all smokers" until the LeeRoy (above) came along and then after that we decided we needed one for ourselves and built thee 'Lock Stock' below). Mark saw our very first smoker, and wanted one exactly the same. Well, he didn't get EXACTLY the same because Harvey built it better than the original, and he loved it!
We borrowed Mark's smoker to compete in the "Smokin' the Valley Low and Slow Brisket Challenge" at Wingham Akoostik Festival - and lo and behold, we won the challenge! Here's a link to an article about this comp (and a photo of us) in "The Land"!
Our latest build
The latest in the 'Oaky Smokies BBQ Smokers' range is this absolute rustic beauty we've called "Lock Stock".
Our Smoking Competition experience has taught us a lot - one of those things is 'we need more space' given that we are often cooking many different cuts of meat in many different categories. The "Lock Stock" is ideal for catering and competitions with 4 deep racks on sliders allowing for easy access and quick placement of meats (important for maintaining the heat in the barrel). The resting rack at the front is also very handy for loading up!
